Cornbread Casserole

This cornbread casserole is loaded up with bacon, jalapenos and cheese making it the perfect side dish or comfort food!
Not only is this casserole delicious and full of varying flavors, it also freezes excellently, so it’s a fantastic make-ahead addition to any meal. Leftovers can be repurposed into a crumbly topping for other meals, too!
While cornbread on its own is perfectly delicious, the addition of a few special ingredients, like bacon, chili peppers, and sour cream, turn it into something truly special!
Ingredients:
- 2 1/4 cups homemade cornbread mix
- 1/4 teaspoon black pepper
- 1 cup sour cream
- 1/2 cup salted butter, melted
- 1/4 cup milk
- 2 large eggs, beaten
- 2 cups frozen corn defrosted
- 8 pieces bacon cooked until crispy and diced
- 1 jalapeño pepper deseeded and minced
- 1 ½ cups grated cheddar cheese divided
