Strawberry Linzer Cookies

Buttery cookies made even better by sandwiching them with strawberry jam, dusted with powdered sugar or drizzled with lemon glaze and of course, cut into cutesy Christmas shapes because ’tis the season! These Linzer cookies also have ground almonds in the dough for more flavour and a great texture as the cookies soften and become even more delicious. Cut-out cookies do take a while to make but they’re not difficult at all and well worth the cut-roll-repeat routine!

Ingredients:

For the dough
  • 1/2 cup whole almonds (or 3/4th cup almond flour)
  • 170 gms butter, at room temperature (12 tbsps)
  • 1/2 cup caster sugar (90 gms)
  • 1 egg yolk, at room temperature (see notes)
  • 1 tsp vanilla extract
  • Zest of 1 lemon (optional, omit if making lemon glaze)
  • 1 and 1/3rd cups all-purpose flour (160 gms)
  • 1/4 tsp salt, if using unsalted butter

For the filling and topping
  • 1/2 cup strawberry jam (any other jam is ok too)
  • 1/3rd cup sifted icing sugar + 1 tbsp lemon juice (lemon glaze for half the cookies)
  • 1/4 cup icing sugar (to dust half the cookies)
