Grilled Swordfish

My favorite way to eat fish is a nice, whole piece simply grilled with some citrus, salt, and pepper, and this grilled swordfish recipe fits the bill! It is super versatile and you could serve it with anything from rice, to mashed potatoes, to these yummy grilled mushroom skewers. I like to grill anything inside on my grill pan, while my husband prefers to grill outside. You could make this simple grilled swordfish either way!

Ingredients:
  • 1/2 small red onion, finely diced
  • 2 Tbsp. white wine vinegar
  • Juice of 2 limes, plus lime wedges for garnish
  • 2 garlic cloves, minced
  • 1/4 c. olive oil
  • 1 1/4 tsp. kosher salt, plus more to taste
  • 4 6-ounce swordfish steaks
  • Black pepper, to taste
  • 2 c. diced fresh pineapple
  • 6 sprigs cilantro, finely chopped
  • 1/4 c. avocado oil
