Puff Pastry Pinwheels with Apple, Bacon and Cheddar

For us, holiday entertaining is about small, intimate get-togethers. A fireplace burning and a record spinning on a turntable. Add in wine. And delicious, looks-super-elegant but was-actually-super-easy appetizers.
Like these Puff Pastry Pinwheels with Apple, Bacon, and Cheddar. The smell of these baking and the flavor of these just scream holiday!
And no one has to know they’re this easy. The filling comes together in a snap, and we rely on buttery, flaky store-bought puff pastry. Topped with cheddar cheese, these are simply heaven.
Ingredients:
- 3 slices thick applewood smoked bacon, diced
- 1 tablespoon butter
- 1/2 yellow onion, finely diced
- 2 Granny Smith apples, peeled and finely diced
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- 1 sheet frozen puff pastry, thawed in the refrigerator overnight
- 4 ounces cream cheese, softened
- 1 teaspoon chopped fresh rosemary
- 1 cup Cheddar cheese
- Egg wash
- Salt and pepper, to taste
