Leg of Lamb

Oven-roasted leg of lamb is slow-cooked in with aromatic herbs and seasonings, then seared on the outside for the perfect caramelized exterior.
Ingredients:
- 3 to 4 lbs boneless leg of lamb
Herb Rub
- 2 tablespoons olive oil
- 2 cloves garlic minced
- 2 tablespoons chopped fresh parsley or 2 teaspoons dried parsley
- 1 tablespoon chopped fresh rosemary or 1 teaspoon dried rosemary
- 1 tablespoon whole grain dijon mustard
- 1½ teaspoons fresh thyme leaves or ¼ teaspoon dried thyme leaves
- ½ tablespoon kosher salt more to taste
- ¼ teaspoon black pepper
For Serving
- fresh parsley chopped, for garnish
- mint sauce optional but recommended
