Leg of Lamb

Oven-roasted leg of lamb is slow-cooked in with aromatic herbs and seasonings, then seared on the outside for the perfect caramelized exterior.

Ingredients:
  • 3 to 4 lbs boneless leg of lamb

Herb Rub
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 2 tablespoons chopped fresh parsley or 2 teaspoons dried parsley
  • 1 tablespoon chopped fresh rosemary or 1 teaspoon dried rosemary
  • 1 tablespoon whole grain dijon mustard
  • 1½ teaspoons fresh thyme leaves or ¼ teaspoon dried thyme leaves
  • ½ tablespoon kosher salt more to taste
  • ¼ teaspoon black pepper

For Serving
  • fresh parsley chopped, for garnish
  • mint sauce optional but recommended
