I’ve adapted the viral protein bowl with thyme-roasted sweet potatoes, perfectly seasoned ground beef, creamy cottage cheese, and a topping of crunchy, nutrient-dense pepitas and hemp seeds, sliced avocado, and a drizzle of hot honey. It’s the kind of meal you’ll be excited to prep and eat a few days in a row (no flavor fatigue here). At home or on the go, this dish will satisfy your comfort food craving while keeping you full with over 45 grams of protein.

My version features taco-seasoned ground beef, sweet potatoes, and cottage cheese with the most incredible fresh flavors for a crave-worthy, nourishing dish.

Ingredients:
Roasted Sweet Potatoes
  • 12 ounces diced sweet potatoes (1 medium sweet potato)
  • 2 1/2 tablespoons olive oil
  • 1 tablespoon minced thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Taco Seasoning
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons cumin
  • 1 teaspoons chili powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt

Taco Meat
  • 2 tablespoons olive oil
  • 1 minced shallot
  • 8 ounces lean ground beef
  • 2 minced garlic cloves
  • 1 1/2 tablespoons tomato paste
  • 3 tablespoons water

Assembly
  • 8 ounces cottage cheese
  • 1/2 avocado, thinly sliced
  • 2 tablespoons pepitas
  • 2 teaspoons hemp hearts
  • 2 tablespoons hot honey
  • 1 tablespoon minced cilantro
