If I’m being honest, squash is one of my least favorite vegetables on the planet. I like some varieties more than others, but there are only a handful of ways I enjoy eating it–outside baked goods, of course!
Deep-fried is definitely my number one way to enjoy yellow squash. Actually, deep-fried is my number one way to enjoy a lot of foods, but I digress. And thanks to the air fryer, I could make a more healthy version of deep-fried squash, and not even feel guilty for having seconds and thirds. - 2 eggs
- 1 tablespoon milk
- 1/4 cup cornmeal

- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon onion powder
- 1/2 paprika
- 1/4 teaspoon garlic powder
