Plum Cake
This classic plum cake is delicious using both dark rich coloured plums or light yellow plums. An autumn delight to be baked when the fruits are at their best. Serve warm as a pudding or enjoy cold served with coffee.
Ingredients:
6oz Butter (unsalted) (melted)
6oz Billington's Unrefined Golden Caster Sugar
1 tsp Almond extract
3 Egg(s) (free range) (separated)
6oz Self-raising white flour
12oz Plum(s) (firm, stoned and halved)
Unrefined golden icing sugar (to finish)
