Chicken Curry Salad

Look no further than this easy recipe for Curry Chicken Salad with apples, raisins, celery, and cashews! In just 15 short minutes, you’ll have a meal that’s perfectly spiced, deeply satisfying, and packed with the protein your body craves.

Ingredients:

Curried Salad Dressing:
  • 1/3 to 1/2 Cup Mayonnaise – to taste
  • ¼ Cup Greek Yogurt
  • 2 tsp Fresh Lime Juice (substitute: Lemon Juice)
  • 1-2 tsp Honey – to taste
  • 1 tsp Curry Powder
  • ¼ tsp EACH: Turmeric and Ground Ginger
  • to taste Kosher Salt, Ground Black Pepper, and Optional Spices

Chicken Salad:
  • 1 pound Cooked Chicken – shredded or medium dice (about 3 cups of cooked chicken or 2 breasts)
  • 1 medium Granny Smith Apple – cored and small dice
  • 2 ribs Celery – small dice (heaping ½ cup)
  • 2 large Scallions – thinly sliced: white and green parts (1/3 cup)
  • ½ to ¾ Cup Salted Roasted Cashews – roughly chop; to taste (sub: toasted almonds)
  • 1/3 Cup Raisins – or more to taste (sub: dried apricots)
  • 1/4 Cup Fresh Cilantro or Dill – more or less to taste; Optional
