Ingredients:

  • 0.5 lb ground beef
  • Kosher salt and ground pepper to taste
  • 2/3 cup beef stock
  • 1/2 cup Gouda cheese shredded
  • 1 1/4 cup Monterey jack cheese
  • 2/3 cup black beans drained and rinsed
  • 1/4 cup red onion finely diced
  • 8 oz chopped tomatoes one can, drained
  • 1/4 cup fresh cilantro chopped
  • To serve: corn chips optional
