Chinese egg drop soup
This warm and comforting Chinese-style egg drop soup is the definition of a winter warmer.
While this egg drop soup recipe is vegetarian, Chinese egg drop soup is a great dish to use up any leftover roast chicken or turkey. Shred the meat and add to the soup at the end to warm through.
Ingredients:
- 4 cups (1 litre) vegetable stock
- 2 tsp sesame oil
- 1 tsp caster sugar
- Ground white pepper, to taste
- ½ tsp ground turmeric
- 1 corn, kernels removed
- 3 cups finely shredded cabbage
- 3 tbsp cornflour mixed with ⅓ cup water
- 3 eggs, lightly beaten
- Fried shallots, coriander leaves, chilli oil (optional), to serve
