Wild Rice Pilaf

This Wild Rice Pilaf is vegan, gluten-free, & the perfect side dish for any celebration! With a chewy wild rice blend, roasted delicata squash, crunchy brussels sprouts, sweet dried cranberries, and a simple dijon dressing- this side dish is truly delicious!

Ingredients:
  • 1 cup wild rice blend soaked 10-15 minutes before cooking
  • 1 ¾ cups vegetable broth for cooking wild rice
  • 2 cups shredded brussels sprouts
  • ½ cup sliced almonds
  • ⅓ cup dried cranberries

Roasted Veggies
  • 1 medium delicata squash seeds & inner flesh discarded and sliced into 1-inch thick pieces
  • 2 medium shallots cut into 2-inch chunks
  • 1 ½ Tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper
  • ¼ teaspoon garlic powder

Garlic Dijon Dressing
  • 2 Tablespoons olive oil
  • 1 Tablespoon apple cider vinegar
  • 1 clove garlic finely minced or grated
  • 1 teaspoon dijon mustard
  • ¼ teaspoon salt add more or less as desired
  • ¼ teaspoon pepper add more or less as desired

Cook Time:
45 minutes
