  • 4 cups mixed greens (I had arugula and spinach)
  • 3 small beets, cooked, peeled, and cubed (about ½ lb).
  • 1 cup toasted nuts of choice (I used hazelnuts and almonds)
  • 3 oz. goat cheese

For the dressing
  • 1 tbsp. extra virgin olive oil
  • 1 tbsp. balsamic vinegar
  • 1 tbsp. maple syrup
  • 1 medium garlic clove, minced
  • 1 tsp. Dijon mustard
  • ½ tsp. sea salt or to taste
