  • 1/3 cup buttermilk
  • 1/3 cup plain Greek yogurt (or sour cream)

For the frosting
  • 1 cup unsalted butter, at room temperature
  • 4 and ½ cups confectioners’ sugar
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons heavy cream or whole milk
  • 2 teaspoons lemon zest
  • 1/2 teaspoon almond extract
  • Pinch of salt
  • Finely chopped pistachios, for garnish
  • Drizzle of honey, optional
