This Peach Cucumber Salad has become one of our go-to sides when the weather is warm and the peaches are perfectly ripe. It’s crisp, juicy, a little sweet, and super refreshing. Basically, everything you want on a hot day.
We have two peach trees in our yard, so when they’re bursting with ripe fruit, this salad is on repeat. It’s one of my favorite ways to put those juicy summer peaches to good use. It’s such a simple salad, just slice, whisk, toss, and you’re done!

Ingredients:
For the Salad
- 2 peaches, pitted and sliced
- 1 English cucumber, thinly sliced
- 2 green onions, sliced
- 3 tablespoons chopped mint
- 3 tablespoons chopped basil
For the Dressing
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1 small clove garlic, grated
- Kosher salt and black pepper, to taste
