Shrimp salad with mango and avocado

For a light and refreshing entree, enjoy shrimp salad with mango and avocado. Even better, you can have this main dish salad on the table in less than 30 minutes.

Why you’ll love it: This salad is so quick and easy to make. The vinaigrette can be made ahead and is great on any salad.

How long it takes: about 20 minutes
Equipment you’ll need: 1 skillet, large bowl, small bowl or jar for dressing

½ teaspoon lime zest (from one lime)

2 tablespoons fresh lime juice (about ½ lime)

2 tablespoons olive oil

2 tablespoons chopped cilantro

1 teaspoon honey

2 teaspoons finely chopped seeded jalapeno

¼ teaspoon salt


1 tablespoon olive oil

8 ounces peeled and deveined large shrimp (about 16, depending on size)

1 teaspoon chili powder


6 cups torn leaf lettuce
