Turkey Carcass Soup

- 1 leftover turkey carcass , excess fat removed (from a 14-pound turkey)
- 6 cups chicken broth
- 1/2 cup uncooked long-grain rice
- 1 yellow onion , chopped
- 4 stalks celery , chopped
- 2 carrots , chopped
- 1 bay leaf
- 1 teaspoon kosher salt
- 1/2 teaspoon coarse ground pepper
- 2 cloves garlic , minced
- 1/2 teaspoon rosemary
- 1/2 teaspoon thyme
- Salt , to taste
