Best Gluten Free Low Carb Keto Shepherd’s Pie

These Mini Low Carb Shepherd’s Pie are made in a muffin pan for perfectly portioned servings. These individual keto shepherd’s pie are a classic comfort food for whole family.
An original recipe for a traditional shepherd’s pie protein source is ground lamb, with a vegetable mixture, and topped with mashed potatoes. If you’re following a keto diet or low carb diet, it would be too high in carbs to enjoy.
I’m not a fan of lamb, so I used ground beef so technically it isn’t a shepherd’s pie, it’s a cottage pie.
Our low carb shepherd’s pie recipe has just 4 grams net carbs and total 8 g carbs with the pie crust.
Ingredients:
- 1 Easy Keto Pie Crust recipe unbaked
- 1 tbsp coconut oil or olive oil
- 1 tsp minced garlic or garlic powder
- 1/2 cup chopped onion
- 1 1/2 lb. ground beef
- 1/4 cup beef broth or chicken broth
- 1 tbsp tomato paste
- 1 tbsp red wine vinegar
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 cup shredded cheddar cheese or vegan cheese for dairy free
- 2 cups mashed cooked cauliflower (I steamed 1 small head, cauliflower florets were about 4 cups total)
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp butter or coconut oil
- optional topping: fresh parsley and dried paprika
Easy Keto Pie Crust
- 2 large eggs
- 1 tbsp extra virgin olive oil or room temperature coconut oil or avocado oil
- 1 tsp vanilla extract eliminate for savory pies
- 1/4 cup Monk Fruit Allulose sweetener -eliminate for savory pies
- pinch of salt
- 1 cup coconut flour
- 1/2 cup unsalted butter cold cut into cubes
