I’ve become a big fan of chia pudding recipes, probably because it’s an easy and delicious way to incorporate chia seeds into one’s diet. This coconut chia pudding recipe is quick, healthy, and portable. It is one of those, on-the-go, eat in the car on the way to work kind of foods. 

Ingredients:

  • 1 13.5 oz can coconut milk
  • 1/3 cup chia seeds*
  • 1 1/2 tablespoons honey
  • 1 teaspoon vanilla extract
  • fresh or frozen fruit for topping
