Kimchi Mushroom & Avocado Sandwich

This epic sandwich with creamy avocado, umami mushrooms and spicy kimchi is a perfect lunch treat. Check it out!

Ingredients:
  • 1 tbsp olive oil
  • 1 garlic clove, bashed
  • 60 g mushrooms
  • 1/2 tbsp soy
  • 2 tbsp kimchi
  • 1 slice sourdough bread
  • 1 tbsp vegan mayo
  • 1 leaf romaine lettuce
  • 1/2 avocado
  • 1 spring onion
  • 1 tbsp sesame seeds, toasted
