Ravioli Soup

This Ravioli Soup with Italian chicken sausage captures everything I love about an easy weeknight dinner — simple ingredients and plenty of comfort. It feels rich without being heavy and cooks in one pot, making it perfect for busy nights when you want something warm, satisfying, and sure to make everyone happy.
Ingredients:
- 8 ounces chicken sweet Italian Sausage
- 6 roma tomatoes, halved
- 1 medium yellow onion, about 1 cup, sliced
- 6 garlic cloves, smashed
- 4 cups chicken bone broth
- ½ cup half & half
- 9 oz mini ravioli, Buitoni ravioletti, Basil Pesto Plin
- 6 oz fresh baby spinach
- ¼ cup grated Parmesan cheese, plus more for serving
