Ingredients:
  • 2 ⅓ cups all-purpose flour 280 g
  • 2 teaspoons corn starch
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • ¾ cup unsalted butter room temperature
  • 1 cup granulated sugar
  • ½ cup light brown sugar
  • 1 egg room temperature
  • 1 egg yolk room temperature
  • 1 to 1 ½ teaspoons mint extract mint or peppermint extract
  • 5 to 10 drops green gel food coloring plus a drop or two of blue if desired
  • 1 cups semi-sweet chocolate chips
  • 2 ounces bittersweet chocolate chopped (or use mini chocolate chips)
