Gluten-Free Macho Nachos
Gluten-free nachos make a terrific gluten-free snack or appetizer for the whole crowd, gluten-free or not. Gluten-free corn tortilla chips are easy to find, and this recipe for gluten-free "macho" nachos is loaded with beef, cheese, and lots of veggies.

Ingredients:
- 12 ounces of gluten-free corn tortilla chips
- 1 pound lean ground beef
- 2 tablespoons gluten-free taco seasoning
- 12 ounces cheddar cheese, grated (or Monterey Jack or your favorite blend of hard cheeses; about 6 cups grated)
- 1/2 cup sweet yellow onion (chopped)
- 1/2 cup red or orange Bell pepper (chopped)
- 1/2 cup pickled Jalapeno peppers (blot dry)
- 1/2 cup sliced black olives (blot dry)
- 1/2 cup green onions (thinly sliced)
- 1/2 cup Roma tomatoes (chopped and blot dry)
- 1/4 cup cilantro (fresh and chopped)
