Ingredients:

Cookies:

  • 1 cup gluten free 1-to-1 flour (I used King Arthur)
  • 1/2 tsp xanthan gum *omit if your flour blend already contains it
  • 1/2 cup dutch-processed cocoa powder
  • 3 tbsp cornstarch
  • 1/3 tsp baking soda
  • 1/8 tsp kosher salt
  • 2/3 cup sugar
  • 1/2 cup unsalted butter at room temperature
  • 1 egg at room temperature, beaten
  • 1 tsp pure vanilla extract

Icing:

  • 1/4 cup unsalted butter at room temperature
  • 1 cup confectioner’s sugar
  • 1 tsp vanilla extract
  • 1-2 tbsp gluten free oat milk
