Lemon Curd Shortbread Tart

With a buttery, press-in crust and crumb topping (made from the same dough) and an easy lemon curd filling, this heavenly Lemon Curd Shortbread Tart is beyond delicious!
I'm pretty sure that this Lemon Curd Shortbread Tart is going to be my "go-to" recipe this year for spring entertaining. My husband is beyond crazy about this lemon curd tart but and my kids too.
Ingredients:
- 8 ounces very soft butter
- 1 cup granulated sugar
- 1 teaspoon pure vanilla extract
- ¼ teaspoon salt
- 1 ¾ cups all-purpose flour
- ¾ cup almond flour
- 1 ¼ cups Ridiculously Easy Lemon Curd

- 1 cup sugar
- finely grated zest from 2 lemons
- ½ cup lemon juice
- 2 egg yolks, reserve the whites for another use or discard
- 3 large eggs
- 4 ounces salted butter, (1 stick) cut into cubes
