Raspberry Crumble Bars

Ingredients:
Crust and topping
  • 1⅓ cups all purpose flour, spooned and leveled
  • 1½ cups old fashioned oats
  • 1 cup light brown sugar, lightly packed
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter, melted and cooled slightly
  • 1 teaspoon pure vanilla extract

Raspberry filling
  • 2 tablespoons cornstarch
  • 1 tablespoon freshly squeezed lemon juice
  • 2 cups fresh raspberries, rinsed and dried well
  • ¾ cup raspberry jam or preserves
