Lemon Sugar Cookies with Raspberry Frosting

These lemon sugar cookies with raspberry frosting are bursting with flavor! Lemon zest and juice lend a tangy citrus flavor to the soft and slightly chewy sugar cookies. Ingredients:
For the Cookies
  • 1 1/4 cups granulated sugar
  • 2 lemons, zested and juiced
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 ¾ cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking soda

For the Frosting
  • 1 ounce freeze dried raspberries, plus extra for garnish
  • 8-ounce block cream cheese, softened
  • ½ cup (1 stick) unsalted butter, softened
  • 4 cups (1 pound) powdered sugar
  • 1 tablespoon milk or cream
