Baked Black Bean Taquitos

These Baked Black Bean Taquitos are healthy and so tasty. Beans, veggies, lime juice, and spices, wrapped in a tortilla and baked to a golden brown, this dish is fantastic.
Ingredients:
- 2 cans (14 oz. each) black beans, drained and rinsed
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 tsp. paprika
- ½ tsp. cumin powder
- ¼ tsp. salt or to taste
- ¼ tsp. pepper or to taste
- 1 cup vegetable broth
- 1 ½ tbsp. lime juice
- ¼ cup cilantro, chopped
- 1 tbsp. plant butter (or regular butter)
- 12 6-inch flour tortillas
- 2 tbsp. olive oil for brushing
