Baba Ghanoush

As a child, I was not a huge fan of authentic Middle Eastern food, but over the past several years, I have developed an obsession with it. I love making all kinds of Middle Eastern foods and I just love to add my own spin on the recipes.

Ingredients:
- 1 Large eggplant
- 2 medium garlic clove, minced or crushed
- 2 Tablespoons tahini
- 2 Tablespoons lemon juice
- 1 Tablespoon Plain Greek Yogurt
- 1 Tablespoon olive oil
- ½ teaspoon each ground cumin, ground coriander, salt
- To Garnish: Aleppo red pepper flakes or paprika, minced parsley or dill
