Blackened Salmon Tacos with Pineapple Avocado Salsa

A fresh and flavorful way to eat fish tacos – blackened fish tacos with a sweet and slightly tangy topping. I cook the fish in a cast-iron skillet or on the grill. It takes only 3 minutes per side, and while the fish is cooking I make the salsa. It literally comes together in about 30 minutes. It’s such a quick and easy meal – and everyone around the table will be reaching for seconds.
Ingredients:

- 1 teaspoon dried thyme
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- ½ teaspoon salt
- 2 salmon filets
- 1 cup FAGE Total 0% Plain Greek Yogurt
- 8 gluten-free tortillas
Pineapple Avocado Salsa
- 1 avocado, cut in small cubes
- 1 cup pineapple, cut in small cubes
- ½ red bell pepper, cut in small cubes
- ¼ red onion, finely chopped
- 2 Tablespoon lime juice, juice of 1 lime
- 2 Tablespoon fresh chopped cilantro
- salt and fresh black pepper
- 1 Tablespoon olive oil
