Shopska Salad (Шопска салата) is a traditional Bulgarian salad that is full of juicy tomatoes and crunchy cucumber, it’s refreshing and quick and easy to prepare. Featuring fresh vegetables and creamy brined white cheese, this colorful salad celebrates the flavors of Bulgaria. Growing up, this salad was a staple at our dinner table during the summer months. I have enoyed making it from an early age and even though I these days are gone, I continue to share it with my family and friends.

Follow my instructions for making this delicious and authentic Shopska salad, a delightful summer salad that you’ll enjoy sharing with loved ones.

Ingredients:
  • 3 tomatoes, cubed
  • ½ long cucumber, or 1 regular cucumber, thinly sliced and halved
  • 1 green bell pepper, cubed
  • ½ of a large red onion, finely chopped
  • ¼ cup black pitted olives, sliced (optional)
  • 1 cup Bulgarian feta cheese, thinly grated, sirene
  • ¼ cup extra virgin olive oil
  • salt, to taste
