Gluten Free English Muffins

Ingredients:
- 3 cups gluten-free 1:1 flour plus an additional 2-4 Tablespoons if needed (I use Bob’s Red Mill 1-to-1 Baking Flour)
- 1 tbsp kosher salt
- 2 tsp instant yeast
- 1 tbsp xanthan gum
- 6 tbsp unsalted butter divided
- 1 tbsp honey
- 1 cup buttermilk
- 1 cup whole milk
- gluten free cornmeal
