Air Fryer Falafel
This time of year, healthy, easy to prepare vegetarian recipes are in high demand. Luckily, these fresh herb falafel hit all the right notes in the kitchen: gluten-free, high in vitamins and minerals, oh, and the best part? What I love about using an air fryer in this recipe is that you’re able to enjoy the satisfying crunch of a crispy exterior, without the heaviness of deep frying. Did I mention that the ever-efficient air fryer will have dinner ready in minutes?
Ingredients:
- 1 1/2 cup dried chickpeas / garbanzo beans, soaked for at least 4 hours
- 3 cloves Garlic
- 1/2 cup roughly chopped yellow onion
- 1 jalapeño, chopped into large pieces
- 1 cup packed fresh parsley leaves
- 1 cup packed fresh cilantro leaves
- 1 1/2 teaspoon Kosher Salt
- 1 teaspoon Ground Cumin
- 1/2 teaspoon Black Pepper
- Olive Oil Spray, for cooking
