Ingredients:
Salad
- 3 cans whole kernel corn, drained (15 ounces each)
- 1 ½ cups Colby Jack Cheese, shredded
- 1 cup red bell pepper, chopped
- ⅓ cup chopped red onion
- 3-4 cups Fritos corn chips, coarsley chopped
- kosher salt and pepper, to taste
- cilantro, for garnish
Dressing
- 3/4 cup mayonnaise
- 1 tablespoon taco seasoning
- 1/2 lime, juiced
