Roasted Corn
Deliciously seasoned Roasted Corn with sweet peppers is my new favorite side dish! This is a must make this summer!
Recently, my fridge was full of corn and sweet bell peppers, so I decided to roast them together in the oven. The combination is UNREAL! With the added seasoning, you might find it hard to get this dish from the sheet pan to the dinner table…I know I did!
Ingredients:
- 8 ears fresh sweet corn (6-1/2 cups)
- 4 bell peppers (I do a red, orange, yellow, & green)
- 1/4 cup olive oil
- 2 teaspoons each: chili powder, paprika
- 1 teaspoon each: onion powder, garlic powder
- 1-1/4 teaspoon salt
- 1/2 teaspoon pepper
- Optional, for serving: finely chopped fresh cilantro
