Beef in Black Pepper Sauce (Bò Sốt Tiêu Đen)

In Vietnam, beef in black pepper sauce is a dish often served at local restaurants, in wedding banquets or special occasions. The Vietnamese name of the dish is “bò sốt tiêu đen“. I like to eat it with rice, but in wedding banquets, it can also be served with several slices of banh mi, plain steamed buns or fried buns. I think you may also see this dish in Chinese cuisine.
The dish is actually quite easy to make at home. I will share all the tips you need to know to make sure the beef will turn out juicy and flavorful with a pleasant texture.
Ingredients:
- 1 tablespoon whole black pepercorns
- 8 oz beef steak
- 1 tablespoon Shaoxing wine, divided
- 1/8 teaspoon salt
- 1 1/2 teaspoon cornstarch, divided
- 1 tablespoon plus 2 teaspoons water, divided
- 1/2 tablespoon cooking oil (plus more for cooking)
- 3 oz red bell pepper (or use a mix of bell peppers with different colors)
- 2 oz yellow onion
- 2 teaspoons oyster sauce
- 2 teaspoons soy sauce (I use regular Kikkoman soy sauce, light soy sauce will work too)
- 1/4 teaspoon dark soy sauce
- 3/8 teaspoon sugar
- 1/2 tablespoon minced garlic
- 1 teaspoon minced ginger
