Chocolate Caramel Cupcakes

Sweet and salty caramel sauce balanced the rich, decadent flavors in these Chocolate Caramel Cupcakes. Moist chocolate cupcakes are topped with whipped chocolate buttercream frosting before adding a dollop of gooey golden caramel sauce.

Homemade caramel sauce is easy to make using just a handful of ingredients, but a good quality store-bought caramel would also do.

Ingredients:
For the Chocolate Cupcakes
  • 3 oz dark chocolate chopped
  • ¼ cup cocoa powder
  • ¾ cup hot water or coffee
  • 1 teaspoon instant coffee or espresso
  • 1 cup (125g) all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ⅔ cup oil
  • ⅔ cup granulated sugar
  • ¼ cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ⅓ cup sour cream

For the Caramel Sauce
  • 1 cup granulated sugar
  • 6 tablespoon unsalted butter, diced
  • ½ cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • ½ tsp salt

For the Chocolate Buttercream
  • 2 oz dark chocolate melted and cooled
  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 2 tablespoon cocoa powder
  • 1 to 2 tablespoon milk
