Creamy Broccoli Pasta

Creamy Broccoli Pasta is a dish that you will turn to often. It is a simple, uncomplicated dish that is quickly and easily prepared. The vibrant flavours of broccoli, lemon, Parmesan cheese and fresh basil are softened by the addition of cream. The pasta has a perfect balance of textures, with the velvety, creamy sauce and slight crunch of broccoli that is cooked to perfection. The finishing touch of fresh basil elevates the flavours. It is a meal that is deeply satisfying.
From a very early age, I have loved broccoli. Yes, not the most common food for a child to love! But I also realise it's not automatically loved by some people, adults and children alike, and I like to think that this recipe will change people's mind.
Adding the broccoli to a creamy garlic sauce, with the added flavours of lemon and cheese, tossed together with pasta is delicious. I hope that you enjoy it as much as I do.
Ingredients:
- 340 g (12 ounces) dried casarecce pasta
- 500 g (1.1 lbs) broccoli - cut into small florets
- 2 tablespoon unsalted butter
- 4 large garlic cloves - finely chopped
- 310 ml (1 ¼ cups) heavy whipping/thickened cream
- 1 teaspoon lemon zest
- 1 ½ tablespoon lemon juice
- 40 g (½ cup) Parmesan cheese - freshly grated
- 3 tablespoon fresh basil leaves - finely chopped
- 1 cup pasta water - reserve before draining pasta
- sea salt and pepper - to taste, if necessary
