Blackened Salmon Tacos with Pineapple Avocado Salsa

Fresh blackened salmon tacos are topped with a flavorful pineapple avocado salsa and a dollop of Greek yogurt for a delicious and easy dinner. Ready to serve in around 20 minutes, this is one meal that the whole family will love.

A fresh and flavorful way to eat fish tacos – blackened fish tacos with a sweet and slightly tangy topping. The pineapple avocado salsa with lime dressing is the perfect balance between sweet and savory and complements the fish perfectly. Add a dollop of yogurt on top, and your fish tacos will be amazing!

I cook the fish in a cast-iron skillet or on the grill. It takes only 3 minutes per side, and while the fish is cooking I make the salsa. It literally comes together in about 30 minutes. It’s such a quick and easy meal – and everyone around the table will be reaching for seconds.

Ingredients:
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon dried thyme
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • 2 salmon filets
  • 1 cup FAGE Total 0% Plain Greek Yogurt
  • 8 gluten-free tortillas

Pineapple Avocado Salsa
  • 1 avocado, cut in small cubes
  • 1 cup pineapple, cut in small cubes
  • ½ red bell pepper, cut in small cubes
  • ¼ red onion, finely chopped
  • 2 Tablespoon lime juice, juice of 1 lime
  • 2 Tablespoon fresh chopped cilantro
  • salt and fresh black pepper
  • 1 Tablespoon olive oil
