Stovetop Mushroom Risotto

This Stovetop Mushroom Risotto recipe is a delicious and creamy dish that is perfect for a comforting meal. With a rich and earthy flavor, this risotto is made with mushrooms, onions, garlic, arborio rice, and vegetable broth. It's cooked on the stovetop, allowing the flavors to meld together and the rice to become tender and creamy. Serve this mushroom risotto as a main course or as a side dish alongside your favorite protein.

Ingredients:

  • 4 to 5 cups low sodium chicken broth or vegetable broth, as needed
  • 2 Tablespoons unsalted butter
  • 2 cups mushrooms of your choice (I used shitake and cremini)
  • 1 tablespoon olive oil
  • 1 medium-sized yellow onion , chopped
  • 3 large cloves garlic , minced
  • 1 ½ cups arborio rice
  • 1 teaspoon dried thyme
  • ½ cup dry white wine
  • 2 tablespoons fresh lemon juice
  • ½ cup shredded parmesan cheese
  • Salt and pepper to taste
  • Fresh chopped parsley for topping
