This Stovetop Mushroom Risotto recipe is a delicious and creamy dish that is perfect for a comforting meal. Ingredients:

  • 4 to 5 cups low sodium chicken broth or vegetable broth, as needed
  • 2 Tablespoons unsalted butter
  • 2 cups mushrooms of your choice (I used shitake and cremini)
  • 1 tablespoon olive oil
  • 1 medium-sized yellow onion , chopped
  • 3 large cloves garlic , minced
  • 1 ½ cups arborio rice
  • 1 teaspoon dried thyme
  • ½ cup dry white wine
  • 2 tablespoons fresh lemon juice
  • ½ cup shredded parmesan cheese
  • Salt and pepper to taste
  • Fresh chopped parsley for topping
