3 tablespoons melted butter or use vegetable oil
1 1/2 cups low fat buttermilk at room temperature
2/3 cup pumpkin puree
2 large eggs at room temperature, separate whites from yolks (optional)
1/2 teaspoon vanilla extract
cooking spray or vegetable oil for greasing the waffle iron
