This Mediterranean Quinoa salad I am sharing with you today is made with simple ingredients and it tastes fantastic. Ingredients:
For the salad
1 cup cooked quinoa (about ¼ cup when uncooked)
½ cup black olives, sliced
½ cup roasted peppers, sliced
½ cup fresh or canned corn kernels
¼ cup red onion, diced
¼ cup cilantro, chopped
⅓ cup feta cheese crumbles
For the dressing
1 tbsp olive oil
1 tsp red wine vinegar or apple cider vinegar
½ tsp dried oregano
½ tsp sea salt
¼ tsp pepper
