Potato Apple Harvest Hash

One of my favorite items to order when I go out for brunch is a potato hash. It is always so flavorful and a great way to enjoy potatoes, veggies, and- in this case- baked apples!
Ingredients:
- 1 small sweet potato diced
- 1 yukon potato diced
- 1 ½ cups diced brussel sprouts
- 1 large carrot peeled & diced
- 1 small red onion peeled & cut into large chunks
- 1 large apple cored & diced
- 1 ½ Tablespoon avocado oil
- 1 Tablespoon maple syrup
- 2 teaspoons dijon mustard
- 1 teaspoon salt
- ½ teaspoon garlic powder
- ¼ teaspoon ground black pepper
