Roasted Poblano Chicken Chili

If you’re craving a cozy bowl of something comforting and warming, this poblano chicken chili is for you. It’s got a lot going for it: a velvety creamy texture, tender bites of chicken, hearty beans, and roasted poblano peppers. Altogether, it makes for a delicious winter warmer.

Ingredients:
  • 2 poblano peppers
  • 2 tablespoons olive oil
  • 1 cup diced onion
  • 1 tablespoon minced garlic
  • 1 tablespoon ground cumin
  • 2 teaspoons dried oregano
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ cup masa harina
  • 16 ounces diced cooked chicken
  • 1 (32-ounce) box low-sodium chicken broth
  • 1 (15-ounce can) kidney beans, drained and rinsed
  • 1 (8-ounce) package cream cheese, cubed
  • Optional garnishes: Chopped cilantro, shredded pepper jack cheese, crushed
