Sweet Potato Gratin

Layers of sweet potatoes are coated in a garlic and parmesan cream sauce for the most indulgent side that everyone will love!
Ingredients:
- 1.5 lbs sweet potatoes, about 2 -3 sweet potatoes, sliced thinly on a mandoline (⅛”)
- 3 Tablespoon butter
- ½ cup onion, finely chopped
- 3 – 4 garlic cloves, finely minced
- 1 cup heavy whipping cream
- 1 Tablespoon arrowroot starch, (or cornstarch)
- Juice of ½ lemon
- 1 cup parmesan cheese, thinly grated
- Salt and pepper, to taste
- 1 teaspoon rosemary
