Spring Mix Salad

Spring Mix Salad is the perfect easy side dish if you buy those big tubs of Spring Mix greens and have a hard time using them! This is a kicked-up salad using my friend Mary’s perfect dressing for spring mix greens, plus Feta and pine nuts.

Spring Mix Salad is the way I turn those spring mix greens that come in a big tub at Costco into a salad that’s good enough to serve to guests! This is a recipe that was inspired by my friend Mary’s Perfect Easy Dressing that helped me become friends with those tubs of Spring Mix Salad you see in every grocery store. And now I love Spring Mix Greens when they’re just served with that dressing.

But when I have time to do more than splash on some olive oil, lime juice, and red wine vinegar, this Spring Mix Salad recipe really bumps up the greens into a tasty salad! And this is seriously good; I could eat this for lunch or dinner most any time of year without feeling deprived, because FETA and PINE NUTS!

Of course the variations are endless, but if you like both Feta and Pine Nuts I hope you’ll try my favorite combination at least once. And if you find another variation of a salad with Mary’s dressing that really helps you eat more salad, please come back and tell us about it in the comments.

Ingredients:
Dressing Ingredients
  • 3 T olive oil (Use good quality extra virgin olive oil for best flavor)
  • 4 tsp. fresh-squeeze lime juice
  • 1/2 tsp. red wine vinegar

Salad Ingredients
  • 8 handfuls of Spring Mix salad greens, or your favorite mix of greens
  • 1/4 cup crumbled Feta
  • 2 T pine nuts
  • salt and fresh-ground black pepper to taste
