- 2 medium cucumbers, peeled and sliced
- 1 cup cherry tomatoes, cut in half
- 1 large avocado, peeled and sliced
- ¼ medium onion, sliced thinly
- ½ cup feta cheese crumbles
- ¼ cup pumpkin seeds toasted or raw
- ¼ cup sunflower seeds toasted or raw
For the dressing
- 3 tbsp. olive oil
- 2 tbsp. apple cider vinegar
- 1 medium garlic clove, minced
- 1 tsp. Dijon mustard
- 1 tsp. maple syrup
- ½ tsp. sea salt or to taste
- ¼ tsp. pepper
