Ingredients
2 cups all-purpose flour
1 cup brown sugar
1/3 cup unsweetened cocoa powder
2 teaspoons baking powder
1 teaspoon baking soda
1 cup sour cream
½ cup milk
1/3 cup vegetable oil
2 eggs, beaten
1 teaspoon almond extract
1 cup miniature semisweet chocolate chips
pinch of salt
Directions
Step 1
Preheat an oven to 400 degrees F. Grease 12 muffin cups or line paper baking mini cups.
Step 2
Stir together the flour, brown sugar, cocoa powder, baking powder, baking soda, and salt in a separate large bowl, and make a well in the center; set aside.
Step 3
Whisk together the sour cream, milk, vegetable oil, eggs, and almond extract in a bowl until evenly blended. Pour the sour cream mixture into the well, stir in the flour mixture until just combined. Fold in the chocolate chips.
Step 4
Spoon into the preparation muffin cups, filling half full. Bake until a toothpick inserted into centers comes out clean, about 20 to 25 min. Cool in pan or wire rack 5 min. Remove from the pan and cool completely on wire rack.
Serve with ice-cream or hot chocolate.
Bon Appetit!
*Cooking tip:
Use a wooden spoon to gently stir ingredients until just combined. Don't worry if there are a few lumps, these will dissolve during baking. Over-mixing the batter will result in a tough muffin instead of a lighter texture.
