Summer Corn Salad

Got corn on the cob? Make this summer fresh summer corn salad with tons of veggies a delicious Thai-inspired dressing.

The dressing is a little bit hot, a little bit savory, and a little bit sweet all thanks to Thai green curry paste, red chili paste, and honey.

Dressing

  • 2 tablespoons green curry paste
  • 2 teaspoons red chili paste
  • 1/2 tablespoon apple cider vinegar
  • 2 tablespoons olive oil
  • 1/2 tablespoon honey
  • 1/2 medium lime juiced
    • Salad

  • 4 ears corn on the cob shucked
  • 2 medium carrots
  • 1/2 cup finely minced red onion
  • 1 medium red pepper minced
  • 1 cup purple cabbage sliced
  • 1/4 cup fresh cilantro minced
  • 2 tablespoons cotija cheese
