Ingredients:
- 2 Tablespoons olive oil or vegetable oil, divided
- 4 eggs
- Salt and pepper , to taste
- 16 oz. salsa verde (about 2 cups)
- 4 cups tortilla chips (about 4 oz.), choose a brand of thick, sturdy chips
